Kale at home

I love Kale and the good thing is: it’s good for you!

I got inspired by the recipe in the smitten cookbook that features kale and cranberries and pecan. I didn’t have a lot of pecan, but a ton of almonds. I roasted them in the oven at 375f.

I also wanted to use some sun dried tomatoes I had. Finally I had Parmesan cheese, shaved. Oh ….and also a sprinkle of fresh rosemary.

The key is to let you salad air in the dressing before serving! Delicious!

Dressing: olive oil 3tbsp, 1tbsp ginger lemon vinegar, salt, pepper.

  • Summer salad : romain lettuce with tomatoes, basil, scallions, Swiss cheese. Dressing : olive oil and lemon juice ! Fresh arômes!
  • Salmon : ginger mustard salmon ! secret recipe of mi amor – delicious!
  • Sautéed Spinach : spinach, pistachios, rosemary, salt.

Why :

Well we wanted a healthy dinner! It was very healthy and very good. We had some Châteauneuf du Pape. This is my favorite wine of all time. Why ? Because it has an amazing taste and a great story or should I say history.

We talked about this wine. I explained to mi amor the reason why this wine is so good. This is a very complex wine. It’s a combination of History and Geography.
So It grows on a particularly soils. 3 different kind of soils but one in particular is interesting. The characteristic comes from the “galets”. Smoothed by the Rhône river these rocks release at night the heat they absorb during the day and protect the soil of the vines during dry summers. The mistral is a wind that helps to keep a dry climate and the sun shines a lot in this area!
And,
1308 – Pope Clément V decided to relocate the papacy to the town of Avignon. He was one of the first wine producers in Châteauneuf. Wine lover he planted more vines around the papacy. Most of the vineyards in France belong at this time to the clergy and the nobles who know how to take care of the vines and make wine. The French Revolution put an end to their properties. Every vineyard was divided into small ones. A business starts where the quality of wine is not as good as it was. Except in Châteauneuf! The wine from there was famous and the vineyard owners pay attention to the quality of their wine!

This wine has a special complex taste because its vines have an history that they draw from the land they grown on!

What :

  • House salad : L’Enfant salad – with tomatoes, pine nuts, lettuce… so fresh, exactly what I wanted!
  • Spinach soufflé crêpe with gruyère – “this is f…. amazing!” said mi amor after the first bite… It was very tasty and I like it too.
  • Goat cheese tart – bacon, goat cheese and fig  – “fantastic”
  • Amaretto/almond crêpe : dessert with crêpe can’t go wrong!
  • Coco rhum / coconut crêpe – was good but I preferred the amaretto/almond one

Everything was very good! Of course mi amor loved it because of the crêpes.  I know what to do to make him happy : make crêpes everyday – he will be the happier man in the entire world!

I would recommend this place, particularly on a nice day : seat outside! The patio is very nice. They have table that you find in Parisian café. The food is simple and delicious. You won’t be disappointed. Our waiter was great, he spoke French which I loved.

Why :

I wanted a nice place recommended and we went there for their happy hour!

Dinner at the Conrad with Timmy

What :

  • Salad : Boston Bibb Lettuce, Mandarin Oranges and Dried Canberries, Goat cheese crostinni, White Balsamic Vinaigrette (sorry for the quality of the picture – it was dark and someone was speaking I didn’t want to disturb his speech)
  • Entrée : Herb Crusted Breast of Chicken, Tomato Basil Bushetta, Parmesan Polenta, Green and White Asparagus, Pesto Cream
  • Dessert : Carmel White chocolate Cheesecake Almond Brittle

Why :

The Annual Event of Timmy Global Health was at the Conrad. I was invited 😉

My favorite was the salad with the White Balsamic vinaigrette. It was not my first time there and I love the food and the service of the Conrad. It’s like watching a dance! They are very professional and I have never been disappointed. Each event I went to there always had great food. Even though I have to admit that their dessert are to rich for me and I am not always a fan. Look forward to being at the next event!

Lunch at Nordstrom Café Bistro

What :

  • Blue Cheese & Pear Salad : baby lettuce tossed with crunchy candied pecans, dried cherries, seasonal pear, blue cheese and dark cherry balsamic vinaigrette – It’s delicious, every bite is an enchantment! I strongly advice you to try this salad!
  • Soupe du jour : Won ton soup with spicy vegetables  : delicious as well. I was so surprised by this place.
Why : 
My friend Blanca and I planned on going to the movie and have a quick lunch before. We went to Nordstrom café Bistro. The staff was really really nice and the place warm because of all the colors and the booths – very comfy atmosphere. The food is high quality! Love the ingredients they used and the flavor of the food…. I want to go back 😉
It’s a chain I know but I am amazed!
