My saturday Banana Bread!

What : Homemade Banana Bread and Earl Grey tea

Why :

Someone gave me 10 ripe bananas! Matt loves banana bread. But until now I hadn’t made an incredible one! I was looking for a good recipe. I made my own! It is a very good banana bread, not the best I have ever had but something far better than the last one!

Here is the recipe

Ingredients :

  • 4  ripe bananas, mashed ( = approx 2 cups )
  • 2 eggs
  • 1/4 + 1/4 cup sugar
  •  2/3 cup vegetable oil
  •  1 cup brown sugar
  •  1/3 cup evaporated milk
  • 1/3 cup of coconut milk or milk (if you don’t have coconut milk)
  •  1 tsp vanilla
  • 2 and 1/2 cups all-purpose flour
  • 2  and 1/4 tsp baking powder
  • 1/3 cups chipped nuts

Preheat oven to 350F.

Mash bananas and set aside.

Beat the yolks with 1/4 cup of sugar until pale yellow. Add in milk, oil, vanilla and the brown sugar. Add mashed bananas. Mix dry ingredients in a bowl, and add to banana mixture with nuts.In a separate bowl, beat the egg whites with 1/4 cup of sugar until the egg whites are stiff but not dry. Gently fold in the egg whites in the banana/flour batter. Pour into 2 greased loaf pans. Bake for 40-45 minutes. Enjoy!

    I love Banana Bread and was looking for a way to push my wife to cook one for me ! Now I can say : ‘Just try this receipe of a friend of mine” it will be more persuasive to get it 🙂 Yeeha !!!!
