Theme dinner : One year anniversary of me in the US!

Where : In my kitchen

What :

  • Sweet potatoes peanut soup : a recipe of cook’s illustrated (love this cooking magazine)
  • Tomato, cilantro, lime quinoa salad (creation inspired by other tried recipes)

Why :

I am solo since Friday morning. Husband in Nicaragua. M friend who is studying for the bar exam and I needed a cool relaxing dinner and I realized talking to her that it had been a year that I moved here. So I looked at what I had in my kitchen to hand and look up at my “recipe to try list”.

The soup was delicious. It’s tasty and unctuous. The sweet potatoes lover are going to fall for it!

The quinoa was very good too. It is definitely healthy and savory! Try, you won’t be disappointed!
